Cherry & Thyme Pan Fried Sweet Potato
As it is #veganuary this month we thought we would join in with the power of healthy eating and bring you one of our household favourites, vegan friendly of course!
Pan Fried Sweet Potato Strips, with Cherry Vinegar and Fresh Thyme
What you will need :
2 large sweet potatoes, we usually go for a potato each in our house
(now available at Rosalies of Cowes in our #highstreetmarket)
A bottle of Wild Island Cherry Vinegar
Fresh thyme, 3 or 4 sprigs
Slice the sweet potatoes, to about medium thickness, and boil until soft.
Add 2 tbsp of Cherry Vinegar to a pan with the fresh thyme and plenty of salt and pepper (or to liking). Then when hot add the sweet potato slices and gently fry until crispy.
Serve with green beans and roasted beef tomatoes or with a crunchy green leaf salad.
Is lovely with either white or red wine, or a large mug of tea depending on the weather!
